Winemaking : with direct pressing upon grape arrival.
Cold temperature vinification (below15°C). 1/3 of the volume is
vinified directly in oak barrels (1 wine) with daily stirring of the lees
for 15 days after termination of alcoholic fermentation.
Maturing : 6 months in one wine oak barrels 1 vin (1/3) and in vats (2/3)
Wine / Food harmony : Anchovy, seafood, shellfish
